THE BEST APPLE PIE YOU WILL EVER EAT

ingredients

PIE INGREDIENTS

  • ½ c unsalted butter
  • 3 T all-purpose flour
  • < ¼ c water
  • ½ c white sugar
  • ½ c packed brown sugar
  • 1 t vanilla
  • 1 t cinnamon
  • 1/8 t nutmeg
  • 8 apples, peeled, cored and sliced (or enough to fill your pie dish)

CRUST INGREDIENTS

  • 2 c all-purpose flour, sifted
  • 1 t salt
  • ⅔ c butter
  • 5-7 T cold water

FOR THE CRUST

Sift flour into a mixing bowl. Cut in butter, in ~¼ T size chunks. Add salt and water, mix until dough is formed. Wrap in saran wrap and place in refrigerator. When you are about to make caramel, take out of fridge and cut in half. Roll out half of the dough out on a flat, floured surface and line a 9″ glass pie dish.

 

FOR THE PIE

Preheat oven to 350° F. Make sure all of your apples are prepped before you start cooking, and set aside in a big bowl. Melt the butter in a saucepan, and stir in flour to form a paste (like a roux). Add the white sugar and brown sugar, vanilla, cinnamon and nutmeg, and just enough water to make a caramel liquid (you don’t want to add too much or your caramel will be thin and watery). Bring the mixture to a boil, then reduce temperature and let simmer for about 5 minutes.

With the bottom crust already in your pan, alternate filling it with the sliced apples and caramel sauce in 2 or 3 batches, so that the apples all have caramel. Remove remaining dough from fridge and roll out on a floured surface. Cover pie, rolling up excess dough around the edges and crimping with a fork. Take a sharp knife and make 3 slices in top of pie.

Place pie in the oven and bake for 45-60 minutes, until apples are soft and crust is golden.
